Food & Nutrition
TOLERASE L is an enzyme preparation containing the acid lactase (B-galactosidase) protein. It is produced by submerged fermentation of a genetically modified microorganism containing the wild type Aspergillus oryzae lactase gene. TOLERASE L helps break down lactose into simpler sugars glucose and galactose, making lactose-containing foods more digestible for those with lactose intolerance. TOLERASE L is commonly used in dairy products, baked goods and other foods to improve digestibility and taste. It is heat stable and retains activity over a wide pH range, making it suitable for use in many food applications.
